Rice pudding is usually a heavy, occasional indulgence. 

It's pretty easy to cut some corners to turn this former guilty pleasure into a healthy, diet-friendly treat.
 This recipe combines canned coconut milk and cooked rice — white or brown rice — to result in a delicious, creamy dessert.
 The coconut milk cooks the rice into a perfectly soft texture,  and with a tad of sweetener and a dash of cinnamon, this vegan rice pudding is the poster child for sweet comfort food.

Some desserts can contain a whole day's worth of calories, especially if you eat a super-sized portion like those often served in restaurants.
 Although rice pudding isn't a particularly good source of essential vitamins and minerals, it does contain 4 percent of the daily value for fiber, 6 percent of daily calcium needs and 8 percent of the daily requirements for phosphorus.
 This dessert can be part of a healthy diet if you limit your portion size and eat mainly nutritious foods during the rest of the day.
Calories
The 2010 Dietary Guidelines for Americans recommend that you limit calories from solid fats and sugars -- the category in which desserts usually fall -- to between 5 and 15 percent of your daily calories.
 If you eat 2,000 calories per day, desserts and other treats should contain no more than 300 calories. Each 4-ounce serving of ready-to-eat rice pudding contains 133 calories, which is comparatively low for a dessert. 
Be mindful of portion size, however, as one serving is only about half a cup.
PREPARATION:-
1.    Add the coconut milk to a small pot. 
Make sure that you mix the can thoroughly before using to ensure the liquid and solids are evenly mixed (they can sometimes separate in storage).
2.    Bring the coconut milk to a simmer over medium-low heat.
3.    Add the honey and stir to combine.
4.    Add rice and continue to stir until it is evenly distributed.
5.    Let the mixture continue to simmer in the pot for about five minutes. The liquids should boil off and the mixture will become thicker.


6.    Spoon into dishes and sprinkle the top with cinnamon. Garnish with a sprig of mint if you're feeling fancy
