Arborio rice pudding Biography
Arborio rice is an Italian short-grain rice. It is named after the town of Arborio, in the Po Valley, where it is grown. When cooked, the rounded grains are firm, creamy, and chewy, due to its higher amylopectin starch content;[1] thus, it has a starchy taste but blends well with other flavours. It is used to make risotto, although Carnaroli, Maratelli and Vialone Nano are sometimes used to prepare the dish. Arborio rice is also used for rice pudding.
Arborio rice, the classic choice for risotto, contains roughly 19 to 21 percent amylose.
 However, that is not the only difference. The desirable "bite" in risotto is due to a defect in Arborio rice called chalk.
During maturation, the starch structures at the grain's core deform, making for a firm, toothy center when cooked.
To find the best Arborio rice brand, we cooked up batches of Parmesan risotto with two domestically grown brands of Arborio rice and four Italian imports; all brands are widely available in supermarkets. To our surprise, the winning rice hailed not from the boot, but from the Lone Star State

Rice puddings are found in nearly every area of the world. Recipes can greatly vary even within a single country. The dessert can be boiled or baked. Different types of pudding vary depending on preparation methods and the ingredients selected. The following ingredients are usually found in rice puddings:
rice; white rice (usually short grain, but can also be long grain, basmati, or jasmine rice), brown rice, black rice or arborio rice
milk; (whole milk, coconut milk, cream or evaporated)
spices; (nutmeg, cinnamon, ginger etc.)
flavorings; (vanilla, orange, lemon, pistachio, rose water etc.)
sweetener; (sugar, brown sugar, honey, sweetened condensed milk, fruit or syrups)
eggs
Arborio rice pudding
Ingredients
1 cup water
Pinch salt
1/2 tablespoon butter
1/2 cup Arborio rice
2 cups whole milk
4 tablespoons sugar
1 teaspoon vanilla extract
Few dashes ground cinnamon
Whipped cream, for serving
Directions
Bring water, salt, and butter to a boil in a medium saucepan. Add the rice, return to a boil, and then reduce the heat to the lowest setting. Shake the pan occasionally and cook until rice has absorbed the water but it still al dente, about 15 minutes.

Bring milk, sugar, vanilla, and a few dashes of cinnamon to a simmer in a separate saucepan. Add the cooked rice and cook at a simmer over medium-low heat until rice absorbs most of the milk and mixture starts to get thick and silky, about 10 to 15 minutes.


Transfer pudding to a large bowl and cool to room temperature. Place in refrigerator until cool and set. Serve with whipped cream and a dash more cinnamon.
