Dairy free rice pudding Biography
INTRODUCTION
INTRODUCTION
Dairy free is a privately held natural foods company located in Eugene, Oregon. Founded in 1987, the company makes a variety of dairy-free frozen desserts. Its two most prominent brands, So Delicious Dairy Free and Purely Decadent, can be found in natural food outlets and grocery stores across the United States, Canada and Korea
Dairy free was created in 2001 by current President/CEO Mark Brawerman. In 1990, Turtle Mountain introduced Living Lightly pints, a line of soy-based, ricesyrup and fruit-sweetened frozen dessert products. In 1998, Turtle Mountain introduced Organic Soy Delicious, a line of soy-based frozen dessert quarts. This brand was later renamed to So Delicious Dairy Free. Turtle Mountain followed that up in 2001 with the introduction of Purely Decadent, a premium line of frozen desserts sold in pints.
Turtle Mountain’s company name was inspired by a place in Nicaragua that borders the ocean, where sea turtles lay their eggs. Natives to the area refer to the place as Turtle Mountain. As part of its company mission, Turtle Mountain donates a portion of its profits to the Sea Turtle Restoration Project, an organization that seeks to protect endangered sea turtle populations around the world. This brand is sold in quarts and is produced with a lower fat and calorie content than premium lines of dairy ice cream.

Dairy free rice pudding
Ingredients:
1 cup Arborio or Jasmine rice
4 cups vanilla soy milk or almond milk
1/8 teaspoon sea salt
1 small cinnamon stick
1/3 cup maple syrup
1/2 cup raisins
Cinnamon or nutmeg powder
Method:
Rinse the rice, drain and set aside.
In a medium saucepan, combine rice, 3 cups milk, salt and cinnamon stick. Bring to a boil over medium-high heat, stirring often to prevent rice from sticking and milk from boiling over.
Reduce heat to medium-low and simmer gently, stirring occasionally, for 20 minutes. Stir in the maple syrup and continue cooking, stirring often and adding more milk if necessary, for about 30 minutes more or until the rice is cooked through and has absorbed most of the milk.
Stir in raisins and remove cinnamon stick. Serve the rice pudding warm or cool, with cinnamon or nutmeg sprinkled on top.
