Brown rice pudding, as the name suggests, is a dessert that consists of rice. All that needs to be done is to combine rice, sugar and milk and cook for 40 to 45 minutes over a medium flame and Brown rice pudding is ready to be served. Brown rice pudding is extensively served as a dessert after meals and also as a snack in between meals and during parties. The best part is that this dessert can be easily prepared at home and can be made with ingredients that are easily and readily available in any kitchen.
Brown rice pudding Just made a batch of long-grain brown rice that came out really fluffy and nutty, a little like the oatmeal I make from Bob's Red Mill Spurtle kind. I always make rice enough to have left over, because it always comes in handy. It occurred to me, scooping and putting it away, to wonder if anybody makes a rice pudding from brown rice? And if so, how? I have heavy cream on hand as well, so it seems like maybe the stars are aligned. All advice appreciated!

Brown rice pudding makes for a hearty, warming dessert. Try using short grain brown rice, which gets stickier while it cooks. The arrowroot powder in this recipe acts as a natural thickener (rather than cornstarch) and will give your dessert a true “pudding” consistency.
INGREDIENTS
1 1⁄2cups brown rice(285g)
3 cups water (700mL)
2 tablespoons arrowroot powder(16g)
1 1⁄2 cups vanilla rice milk(350mL)
1⁄4 cup raisins(36g)
1⁄4cup maple syrup(80g)
1 teaspoon vanilla extract(5mL)
1 tablespoon ground cinnamon(8g)
1⁄2 teaspoon sea salt(3g)
1 teaspoon pistachios, shelled and chopped(3g)
1 teaspoon almonds, chopped(3g)
DIRECTIONS
Preheat the oven to 350°F/177°C.
Add brown rice and 3 cups water in roaster, cover and cook over medium heat. When Vapo-Valve™ clicks, reduce heat to low and simmer for 40 - 50 minutes or until very soft.
In a large bowl, dissolve the arrowroot powder in 1 cup of milk. Add the rice, raisins, maple syrup, vanilla, cinnamon and salt. Mix well to combine. Transfer to Oval Baking Dish, cover with foil and bake for 1 hour, or until browned and bubbly.
Remove from the oven and stir in remaining ½ cup of rice milk. Let cool for about 1 hour before serving. Garnish with pistachios and almonds.
